Ale House Chicken Skewers with Lemon-Herb Quinoa

Ingredients:


For the Ale House Chicken Skewers:

- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes

- 2 tablespoons olive oil

- 1 tablespoon lemon juice

- Wooden skewers, soaked in water for 30 minutes


For the Lemon-Herb Quinoa:

- 1 cup quinoa

- 2 cups vegetable broth or water

- 1 tablespoon lemon zest

- 2 tablespoons lemon juice

- 1 tablespoon chopped fresh parsley

- 1 tablespoon chopped fresh dill

- Salt and pepper to taste

 

Instructions:

Ale House Chicken Skewers:

1. In a large bowl, combine olive oil, Craft Spice Blends Ale House Chicken Seasoning, and lemon juice.

2. Add the chicken cubes to the bowl and toss until evenly coated. Cover and marinate in the refrigerator for at least 30 minutes.

3. Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers.

4. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.


Lemon-Herb Quinoa:

1. Rinse the quinoa under cold water in a fine-mesh strainer to remove any bitterness.

2. In a saucepan, bring the vegetable broth or water to a boil. Stir in the rinsed quinoa and reduce the heat to low.

3. Cover and simmer for about 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.

4. Fluff the quinoa with a fork and stir in the lemon zest, lemon juice, chopped parsley, and dill. Season with salt and pepper to taste.
